Sails at the Desert Dining Ilkari Restaurant is located in Sails in the Desert at Ayers Rock Resort. An immersive dinner menu is available with a modern twist to a traditional buffet; the interactive dining menu includes an array of salads, vegetables, antipasto, seafood, roasts and a grill selection abound with the chef’s signature dishes enlivened by Indigenous flavours. For dessert, enjoy cascading rich and creamy chocolate fountain served alongside an intercontinental selection of mouth-watering sweet treats.

Day 6: Sunday 26th September:

Sounds of Silence Dinner This experience is an iconic 5 star dining experience under the sparkling Outback sky. It begins with canapes and chilled sparkling wine upon a dune top overlooking the Uluru-Kata Tjuta National Park. As the sun sets and darkness falls, listen to the sound of a didgeridoo and join your table of fellow travelers for an unforgettable dining experience. A selection of Australian wine and beer is on offer while the first course is served at your table. As the night sky twinkles to life, you will be welcomed to an interactive chef’s station where you will be served your choice from a freshly prepared, bush tucker inspired menu incorporating native bush ingredients. Settle back and listen to a resident star talker decode the southern night sky. Locate the Southern Cross, the signs of the zodiac, the Milky Way, as well as planets and galaxies that are visible due to the exceptional clarity of the atmosphere.

Tali Wuru 4 Course Dinner This 4 course dinner is an intimate experience with no more than 16 people (so we recommend booking in advance). The contrast between the spectacular natural setting and the world-class gastronomic adventure on your plate is simply awe-inspiring. This is so much more than a dining experience; it's a moment in time remembered forever. Tali Wiru, meaning 'beautiful dune' in local Anangu language, encapsulates the magic of fine dining under the Southern Desert sky. Instead of walls, this open-air restaurant has magnificent views of Uluru and the distant domes of Kata Tjuta, and for unique ambiance there's the stillness of the desert at night. Every course of this exclusive four-course dinner is infused with ancient native herbs and spices. Each dish is constructed to respect and put a spotlight on the quality and attributes of each ingredient and bring them together in harmony. Taste items such as pressed wallaby with fermented quandong as an entree, while main course could be pan roasted toothfish with coastal greens, desert oak and fermented muntries. Day 7: Monday 27th September:

Kings Canyon Dining Experience Under a Desert Moon Experience an outback dining delight only found at Kings Canyon Resort. The night starts off with canapés and a glass of sparkling wine on the green lawn in front of Carmichaels’ Restaurant. Then you will be taken to a hidden location where your table is set up under a canopy of stars in the great Southern sky. A fire flickers as you are served a five course dinner created from seasonal, locally sourced produce with paired wines. Some produce and native herbs you may be familiar with and others may surprise and delight.
